  • 1 cup light coconut milk or any plant-based milk
  • 2 tablespoons maple syrup or agave nectar
  • 1 teaspoon vanilla extract can be omitted
  • 3 tablespoons freshly squeezed orange juice from about 3 mandarin oranges
For Toppings
  • 1/2 cup Greek yogurt or coconut yogurt for dairy-free
  • 1/2 cup mandarin orange slices
  • 1 tablespoon orange zest for flavor
  • 2 tablespoons coconut flakes optional

Method
 

Instructions
  1. Juice the Oranges by squeezing juice from 3 mandarin oranges.
  2. Combine freshly squeezed orange juice, light coconut milk, chia seeds, maple syrup, and vanilla extract in a mixing bowl.
  3. Let the mixture sit for about 5 minutes, then stir again to break clumps.
  4. Refrigerate the mixture for at least 2 hours or overnight.
  5. Top with Greek yogurt, mandarin orange slices, orange zest, and coconut flakes before serving.
