For the Cream Layer
  • 1/2 cup Raw Cashews Create a creamy texture for the top layer; must be soaked for one hour in hot water.
  • 1/2 cup Additional Oat Milk Further combines with cashews for a smooth texture.
  • 2 tablespoons Lemon Juice Provides acidity and brightness; fresh is recommended, but bottled can work as well.
  • 1/2 teaspoon Turmeric Optional for color; omit if on a budget or for taste preferences.
  • 1 teaspoon Lemon Extract Enhances lemon flavor intensity; can replace with lime extract for a different twist.

Method

  1. In a large bowl, combine oat milk, chia seeds, lemon zest, maple syrup, vanilla extract, and sea salt. Whisk well for about 2 minutes until fully blended.
  2. Cover the bowl and place in the refrigerator to set for about 3 hours or ideally overnight.
  3. Soak the raw cashews in hot water for 1 hour. Drain and set aside.
  4. In a blender, combine soaked cashews, additional oat milk, maple syrup, lemon juice, turmeric (if using), and lemon extract. Blend until smooth.
  5. Once the chia pudding has set, divide it evenly among jars.
  6. Pour the lemon cream mixture over the chia pudding in each jar.
  7. Cover the jars and refrigerate for at least 3 hours to allow flavors to meld.
  8. Serve topped with fresh fruits, granola, or a drizzle of maple syrup.

Notes
