- In a large bowl, combine oat milk, chia seeds, lemon zest, maple syrup, vanilla extract, and sea salt. Whisk well for about 2 minutes until fully blended.
- Cover the bowl and place in the refrigerator to set for about 3 hours or ideally overnight.
- Soak the raw cashews in hot water for 1 hour. Drain and set aside.
- In a blender, combine soaked cashews, additional oat milk, maple syrup, lemon juice, turmeric (if using), and lemon extract. Blend until smooth.
- Once the chia pudding has set, divide it evenly among jars.
- Pour the lemon cream mixture over the chia pudding in each jar.
- Cover the jars and refrigerate for at least 3 hours to allow flavors to meld.
- Serve topped with fresh fruits, granola, or a drizzle of maple syrup.
