  • 1 tablespoon Fresh Lime Juice

  • 1 teaspoon Ground Cumin Can omit for milder taste.

For Seasoning

  • 1 medium Ripe Avocado Sprinkle with lime juice to prevent browning.
  • 1 cup Fire-Roasted Corn Frozen or canned corn can be used.
  • to taste Jalapeño Ranch or Cilantro Ranch Dressing For drizzling.

Method
 

Marinating and Cooking
  1. In a medium bowl, combine olive oil, lime juice, smoked paprika, ground cumin, chili powder, garlic powder, and salt and black pepper. Add shrimp and marinate for 15 minutes.
  2. Cook rice according to package instructions, then fluff with a fork once done.
  3. Heat a skillet over medium-high heat and cook marinated shrimp for 2-3 minutes on each side until pink.
  4. Chop red onion, cherry tomatoes, jalapeño, and avocado while shrimp is cooking.
  5. Assemble bowls with rice, shrimp, corn, onion, tomatoes, jalapeño, avocado, and drizzle with dressing and cilantro.
