- Preheat your oven to 350°F (177°C).
- Wash the potatoes under cold water, rub with oil, sprinkle with salt, and pierce with a fork. Bake for about 1 hour and 15 minutes until soft.
- Let the potatoes cool, then peel and mash them in a large mixing bowl.
- Add cream cheese, butter, 1 cup of cheddar cheese, and sour cream to the mashed potatoes. Mix until creamy.
- Stir in garlic, salt, and pepper. Ensure seasonings are well distributed.
- Grease a 9x13-inch baking dish, spoon the potato mixture into it, and spread evenly.
- Cover with plastic wrap and refrigerate if making ahead, or proceed to bake.
- Bake uncovered for 30-35 minutes until bubbly and golden on top.
- Sprinkle the remaining cheddar cheese on top and bake for an additional 5 minutes until melted.
- Let cool for a few minutes, garnish with chives and bacon, then serve.
