For the Sandwich
  • 8 oz Turkey Use rotisserie turkey for convenience.
  • 1/2 cup Basil Pesto Homemade is preferred, but store-bought is fine.
  • 4 oz Fresh Mozzarella Slice thinly for even melting.
  • 4 slices Bread Ciabatta or focaccia are ideal.
For Grilling
  • 2 tbsp Olive Oil For grilling.

Method
 

Step-by-Step Instructions
  1. Preheat a skillet or panini press over medium heat for about 5 minutes.
  2. Spread basil pesto on the inside of both slices of your chosen bread.
  3. Layer slices of turkey and fresh mozzarella on one slice of pesto-spread bread.
  4. Drizzle olive oil over the outside of both sandwich slices.
  5. Grill the panini for about 3-4 minutes on each side until golden brown.
  6. Remove from heat, let rest for a minute, then slice and serve warm.
