Preparation
- Preheat your oven to 400°F (200°C).
- Poke several holes in each potato, wrap them tightly in aluminum foil, and place them on the oven rack.
- Bake for about 1 hour or until fork-tender.
- In a skillet, heat the ground beef over medium-high heat for 5-7 minutes until browned; drain excess fat.
- Sprinkle taco seasoning over the beef, add a splash of water, bring to a boil, then simmer on low for 10 minutes.
- Once the potatoes are cool, slice the tops open and fluff the insides with a fork.
- Fill each potato with the seasoned beef and top with shredded lettuce, cheddar cheese, sour cream, salsa, and guacamole.
- Garnish with sliced green onions and serve.
