  • 1 cup Cheddar Cheese Feel free to switch it up with Monterey Jack or pepper jack.
  • 1 cup Sour Cream Greek yogurt is a healthier alternative.
  • 1 cup Salsa Fresh pico de gallo can enhance the flavor.
  • 1 cup Guacamole Avocado slices can replace it for a lighter option.
  • 2 stalks Green Onion Diced onion or chives are great substitutes.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Poke several holes in each potato, wrap them tightly in aluminum foil, and place them on the oven rack.
  3. Bake for about 1 hour or until fork-tender.
  4. In a skillet, heat the ground beef over medium-high heat for 5-7 minutes until browned; drain excess fat.
  5. Sprinkle taco seasoning over the beef, add a splash of water, bring to a boil, then simmer on low for 10 minutes.
  6. Once the potatoes are cool, slice the tops open and fluff the insides with a fork.
  7. Fill each potato with the seasoned beef and top with shredded lettuce, cheddar cheese, sour cream, salsa, and guacamole.
  8. Garnish with sliced green onions and serve.
