- Wash and dry 4 to 6 medium Russet potatoes. Poke holes in each potato to prevent explosions while baking.
- Wrap each potato in aluminum foil tightly and place on a baking sheet. Bake for 1 hour or until tender.
- In a skillet over medium-high heat, brown 1 pound of lean ground beef, stirring frequently for 5-7 minutes.
- Add taco seasoning and water to the browned beef, stir, and simmer for 10 minutes.
- Carefully remove baked potatoes from the oven, allow to cool, then slice open and fluff with a fork.
