For the Salmon
  • 680 grams Salmon fillets Fresh, skin-on fillets
  • 2 tablespoons Olive Oil Can substitute with avocado oil
  • Salt Adjust to taste
  • Pepper Adjust to taste
For the Stuffing
  • 150 grams Baby Spinach Fresh preferred
  • 1 teaspoon Italian Seasoning Can substitute with oregano, basil, and thyme mix
  • 1 teaspoon Paprika Regular or smoked
  • 1/4 teaspoon Cayenne Pepper Adjust according to your spice preference
  • 200 grams Feta Cheese High-quality sheep’s feta recommended
  • 50 grams Parmesan Cheese Freshly grated for best texture
  • 100 grams Roasted Red Peppers Can substitute with sun-dried tomatoes

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice salmon fillets lengthwise without cutting all the way through and lay them skin-side down.
  3. Brush tops of salmon fillets with half the olive oil and season with salt and pepper.
  4. Heat remaining olive oil in a skillet over medium heat; sauté spinach, Italian seasoning, paprika, and cayenne pepper for about 2 minutes.
  5. Remove from heat and stir in roasted red peppers, feta cheese, and Parmesan until well combined.
  6. Spoon the spinach-feta mixture into the salmon pockets, not overflowing.
  7. Bake stuffed salmon for 12-17 minutes until opaque and flaky.
  8. Let it rest for a few minutes before serving.
