  • 4 pieces Whole-wheat Tortillas Corn tortillas can be used for gluten-free
  • 1 medium Avocado Creamy spread; tahini-lemon sauce can be an alternative
  • 2 cups Lettuce Mixed greens are a great alternative
  • 1 cup Tomatoes Diced for a burst of flavor
  • 1/2 medium Red Onion Thinly sliced; green onions can be used for milder flavor
For the Buffalo Sauce
  • 1/2 cup Hot Sauce Frank's RedHot is recommended
  • 4 tablespoons Vegan Butter Can be swapped with olive oil
  • 2 tablespoons Maple Syrup Agave nectar is a suitable alternative
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder

Method
 

Steps
  1. Preheat your oven to 400°F (200°C).
  2. Drain and rinse one can of chickpeas, then pat them dry.
  3. Toss chickpeas with smoked paprika, garlic powder, salt, and olive oil until evenly coated.
  4. Spread chickpeas on a baking sheet and roast for about 20 minutes, stirring halfway through.
  5. In a saucepan, combine hot sauce, melted vegan butter, and maple syrup over low heat for 5 minutes.
  6. Warm tortillas in a skillet or microwave to keep them pliable.
  7. Spread avocado on each tortilla, add roasted chickpeas, lettuce, tomatoes, and red onion.
  8. Roll each tortilla tightly and slice diagonally before serving.
