Step-by-Step Instructions for Smoky Shredded Tofu
  1. Preheat the oven to 425°F (220°C). Grate the super firm tofu and combine with cornstarch, tamari, smoked paprika, and oil in a mixing bowl. Spread on a parchment-lined tray and bake for 25 minutes, turning halfway until golden and crispy.
  2. While the tofu bakes, mash the avocado until creamy and mix in chopped herbs, grated garlic, fresh lime juice, and salt to create the spread.
  3. Slice the English muffins in half, spread avocado on one side, add crispy tofu, veggies, and cap with the other muffin half.
  4. For storage, wrap the sandwiches in parchment or plastic wrap; refrigerate for up to 3 days. Reheat in a toaster oven at 350°F for 5-7 minutes.
