  • 1 pound Carrots Fresh, firm for the best texture
  • 2 tablespoons Olive Oil Extra virgin for optimal flavor
For the Seasoning
  • 1/4 cup Parmesan Cheese Can substitute with nutritional yeast for vegan
  • 1 teaspoon Garlic Powder Fresh garlic can also be used
  • 1 teaspoon Smoked Paprika Regular paprika for a milder flavor
  • to taste Salt Essential for seasoning
  • to taste Black Pepper Essential for seasoning
For the Garnish
  • 2 tablespoons Fresh Parsley Chopped finely for garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large pot, bring salted water to a boil, then add carrot rounds and simmer for 10-12 minutes until fork-tender. Drain and cool slightly.
  3. Smash each carrot round gently using the bottom of a glass or measuring cup to flatten.
  4. Drizzle smashed carrots with olive oil, then sprinkle garlic powder, smoked paprika, salt, and black pepper. Top with Parmesan cheese.
  5. Roast seasoned carrots in the preheated oven for 20-25 minutes, flipping halfway through until golden brown and crispy.
  6. Remove from oven and sprinkle with chopped parsley before serving.
