Ingredients
  

For the Meatballs
  • 1 pound Ground Beef 85-90% lean for juiciness.
  • 1 medium Yellow Onion Chopped.
  • 1 medium Green Bell Pepper Diced.
  • 2 cloves Garlic Minced.
  • 1 large Eggs Beaten.
  • 1 cup Panko or Plain Bread Crumbs Can use gluten-free.
  • 1/2 cup Whole Milk Can use almond or oat milk.
  • 1/4 cup Ketchup Or barbecue sauce for a twist.
  • 1 tablespoon Dried Parsley Fresh parsley can be used.
  • 1 teaspoon Dried Italian Seasoning
  • 1 teaspoon Kosher Salt Or sea salt.
  • 1/2 teaspoon Black Pepper Freshly ground.
  • 1 teaspoon Paprika Smoked paprika can deepen flavor.
For the Sauce
  • 2 tablespoons Dijon Mustard Yellow mustard is a milder alternative.
  • 1 tablespoon Apple Cider Vinegar Can substitute with lemon juice.
  • 1 tablespoon Light Brown Sugar Granulated sugar or honey can also be used.
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil, lightly greased.
  2. Combine ground beef, chopped onion, diced bell pepper, minced garlic, beaten eggs, bread crumbs, milk, ketchup, parsley, Italian seasoning, salt, pepper, and paprika in a mixing bowl. Mix gently.
  3. Shape the mixture into golf ball-sized meatballs and place them on the baking sheet with 2 inches apart.
  4. Bake the meatballs for 15 minutes until browned.
  5. Whisk together the sauce ingredients in a small bowl until smooth.
  6. Remove meatballs from the oven, spoon the sauce over them to coat, and bake for an additional 15 minutes.
  7. Once done, let meatballs rest for a few minutes before serving.
