  • 1 cup Spinach Fresh or frozen, chopped.
  • 1 cup Milk Can substitute with almond milk.
  • 1 cup Cheddar Cheese Shredded, optional.
  • 1 cup Bell Pepper Chopped, can use any color.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  3. Fold in the spinach, bell pepper, and cheese.
  4. Pour the mixture into the muffin tin, filling each cup about 2/3 full.
  5. Bake for 20 minutes or until the muffins are golden and set.
  6. Let cool for 5 minutes before removing from the tin.
