- Preheat your oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper.
- In a small bowl, whisk together one egg and a splash of heavy cream until well blended.
- Roll out one sheet of thawed puff pastry on a floured surface to about 1/8 inch thick.
- Cut the rolled-out puff pastry into six equal rectangles and arrange them on the baking sheet.
- Place a slice of ham and a rectangle of gruyere cheese in the center of each pastry rectangle.
- Brush the edges of each rectangle with the egg wash, fold over to seal, and pinch the edges together.
- Brush the tops with egg wash and sprinkle with thyme and everything bagel seasoning.
- Bake for 20-25 minutes until golden brown and puffed up.
- Let cool slightly before serving warm.
