  • 2 cups Marinara Sauce Store-bought or homemade works great.
  • 3 cloves Garlic Minced; fresh is best.
For Seasoning and Extra Flavor
  • 1 teaspoon Italian Herbs Adjust according to your taste.
  • 1/2 teaspoon Onion Powder Optional but recommended.
  • 1/2 teaspoon Garlic Powder For extra flavor.

Method
 

Step-by-Step Instructions
  1. Preheat oven to 410°F (210°C) and grease a 10x10 casserole dish with olive oil.
  2. Slice eggplants and sauté in olive oil with salt and pepper for about 5 minutes.
  3. Mix marinara sauce with minced garlic and season to taste.
  4. Prepare vegan ricotta by mixing with onion powder and garlic powder until smooth.
  5. Layer the ingredients in the casserole dish starting with marinara, followed by eggplant, ricotta, marinara, and cheese.
  6. Cover and bake for approximately 30 minutes, then let it cool for 5-8 minutes.
  7. Slice and serve warm.
