Method
 

Preparation Steps
  1. In a large mixing bowl, combine ground chicken, finely chopped onion, minced garlic, chopped fresh parsley, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly until evenly incorporated.
  2. Dampen your hands and shape the mixture into small oval-shaped koftas, about 2 inches long, making sure they are firmly packed.
  3. Preheat your grill to medium-high heat, about 375°F (190°C). Lightly brush the grates with olive oil.
  4. Place the koftas on the preheated grill and cook for about 10-12 minutes, turning occasionally until golden-brown and reaching an internal temperature of 165°F (74°C).
  5. Mix yogurt, lemon juice, and a pinch of salt in a mixing bowl until smooth and creamy.
  6. Arrange the grilled Chicken Koftas on a serving platter and serve with the Garlic Yogurt Sauce on the side.
