- Preheat your oven to 350°F (175°C).
- Grease a nonstick muffin tin with extra-virgin olive oil.
- Finely dice the red bell pepper and scallions, then distribute them among the muffin cups.
- In a large mixing bowl, whisk together the eggs, grated garlic, sea salt, and black pepper. Add flour and baking powder, and stir just enough to combine, leaving some lumps.
- Carefully divide the egg mixture among the muffin cups, filling each about three-quarters full.
- Sprinkle crumbled feta cheese over the top of the egg mixture in each muffin cup.
