- Bring 1000ml of water to a boil in a medium-sized pot. Add 60g of tapioca pearls and simmer for 15–18 minutes, stirring to prevent sticking.
- Turn off the heat and cover the pot, allowing the pearls to steep for 10–15 minutes.
- Drain the pearls, transfer them to a bowl with ice water, and let soak for 3 minutes before draining again.
- Cut 100g of watermelon into 1cm cubes. Blend 300g of watermelon with 400ml of coconut milk until smooth.
- Layer 50g of watermelon cubes and 2 tablespoons of drained tapioca pearls in clear glasses. Pour in the watermelon-coconut smoothie until the glasses are 90% full.
- Serve immediately for the best texture.
