For the Tapioca Base
  • 60 g Tapioca Pearls Feel free to experiment with different types.
  • 1000 ml Water Essential for cooking tapioca pearls.
For the Watermelon Mixture
  • 300 g Watermelon Fresh, ripe watermelon enhances sweetness.
  • 400 ml Coconut Milk For a lighter version, dilute with water.
For Layering
  • 100 g Watermelon Cubes Cut into small pieces.
  • to taste Additional Sweetener Optional, to enhance flavor.

Method
 

Step-by-Step Instructions
  1. Bring 1000ml of water to a boil in a medium-sized pot. Add 60g of tapioca pearls and simmer for 15–18 minutes, stirring to prevent sticking.
  2. Turn off the heat and cover the pot, allowing the pearls to steep for 10–15 minutes.
  3. Drain the pearls, transfer them to a bowl with ice water, and let soak for 3 minutes before draining again.
  4. Cut 100g of watermelon into 1cm cubes. Blend 300g of watermelon with 400ml of coconut milk until smooth.
  5. Layer 50g of watermelon cubes and 2 tablespoons of drained tapioca pearls in clear glasses. Pour in the watermelon-coconut smoothie until the glasses are 90% full.
  6. Serve immediately for the best texture.
