Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (204°C) and prepare a large casserole dish lined with aluminum foil.
  2. Spread thinly sliced shallots in the bottom of the casserole dish and scatter half of the garlic cloves on top, followed by fresh thyme and rosemary.
  3. Drizzle chicken pieces with olive oil, season with salt and pepper, and place skin-side up in the dish, tucking in the remaining garlic cloves.
  4. Pour chicken broth and white wine gently around the chicken.
  5. Roast in the preheated oven uncovered for about 1 hour until the skin is golden and the internal temperature reaches 165°F (74°C).
  6. Remove from the oven, let it rest for a few minutes, then serve with pan juices and your choice of sides.
