- Preheat the oven to 400°F (204°C) and prepare a large casserole dish lined with aluminum foil.
- Spread thinly sliced shallots in the bottom of the casserole dish and scatter half of the garlic cloves on top, followed by fresh thyme and rosemary.
- Drizzle chicken pieces with olive oil, season with salt and pepper, and place skin-side up in the dish, tucking in the remaining garlic cloves.
- Pour chicken broth and white wine gently around the chicken.
- Roast in the preheated oven uncovered for about 1 hour until the skin is golden and the internal temperature reaches 165°F (74°C).
- Remove from the oven, let it rest for a few minutes, then serve with pan juices and your choice of sides.
