Ingredients
  

Crust
  • 1 crusts Pie Crusts store-bought or homemade
  • 1 tablespoon Unsalted Butter for greasing muffin tin
Filling
  • 4 large Eggs room temperature
  • ¾ cup Whole Milk can substitute with low-fat
  • ½ cup Heavy Cream can use half-and-half or evaporated milk
  • ½ teaspoon Salt adjust to taste
  • ½ teaspoon Pepper freshly ground
  • 1 dash Cayenne optional
  • 1 cup Fresh Spinach chopped, or substitute with frozen spinach
  • ½ cup Onion chopped
  • 1 cup Cooked Ham diced, can substitute with bacon or sausage
  • 1 cup Swiss Cheese shredded, can also use Gruyere, Cheddar, or Feta

Method
 

Preparation
  1. Roll out the pie crusts on a lightly floured surface. Cut into 4-inch circles and press into a greased muffin tin.
  2. Place the muffin tin in the freezer for 15 minutes to prevent shrinkage.
  3. Preheat your oven to 375°F (190°C).
  4. In a large bowl, whisk together eggs, milk, cream, salt, pepper, and cayenne. Fold in spinach, onion, ham, and cheese.
  5. Remove the muffin tin from the freezer and fill each cup with the egg mixture, leaving about a ¼-inch space at the top.
  6. Bake for 25-30 minutes until tops are set and golden.
  7. Allow to cool in the pan for about 10 minutes before serving.
