Preparation
- Preheat your toaster oven to 400°F (or 375°F for convection setting).
- Prepare a baking sheet by greasing lightly or lining with parchment paper.
- Mix the filling by combining the cooked mashed sweet potato, brown sugar, vanilla extract, ground cinnamon, ground nutmeg, fine sea salt, and chopped pecans in a bowl.
- Roll out the pie crust on a floured surface to about 1/8 to 1/4 inch thickness and cut into 3-inch circles.
- Fill each circle with about a tablespoon of filling, fold, seal, and crimp the edges.
- Brush the tops with heavy cream and sprinkle with turbinado sugar.
- Bake in the preheated oven for 12 to 14 minutes until golden brown.
- Let cool for 5 minutes and serve warm or at room temperature.
