- Allow the fresh burrata to sit at room temperature for 15–20 minutes.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of unsalted butter.
- Evenly spread the melted butter across the surface of the pan.
- Place one slice of bread into the hot pan and spread a layer of spinach pesto on top.
- Break up the burrata and place it evenly on the pesto, then top with another slice of bread.
- Cook for about 3–4 minutes or until the bottom slice is golden-brown.
- Carefully flip the sandwich and cook the other side for an additional 3–4 minutes.
- Remove the sandwich from the skillet, let it sit for a minute, then slice in half and serve.
