Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Toss the peeled and cubed sweet potatoes with extra virgin olive oil, ground cinnamon, and ground nutmeg.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet and roast for 50-60 minutes.
  4. Once cooled, reduce oven temperature to 375°F (190°C) and mash the roasted sweet potatoes.
  5. Combine with almond milk, vanilla extract, brown sugar, pure maple syrup, and ground allspice.
  6. Stir in the soaked raisins and marshmallows.
  7. Lightly grease a 9x13 inch baking dish and transfer the sweet potato filling into it.
  8. Pour maple syrup over the raw pecans and mix; spread over the top of the casserole.
  9. Cover with foil and bake for 15 minutes, then bake uncovered for another 15 minutes.
  10. Allow to cool slightly before serving.
