Preparation Steps
- Preheat your oven to 400°F (200°C).
- Toss the peeled and cubed sweet potatoes with extra virgin olive oil, ground cinnamon, and ground nutmeg.
- Spread the sweet potatoes in a single layer on the prepared baking sheet and roast for 50-60 minutes.
- Once cooled, reduce oven temperature to 375°F (190°C) and mash the roasted sweet potatoes.
- Combine with almond milk, vanilla extract, brown sugar, pure maple syrup, and ground allspice.
- Stir in the soaked raisins and marshmallows.
- Lightly grease a 9x13 inch baking dish and transfer the sweet potato filling into it.
- Pour maple syrup over the raw pecans and mix; spread over the top of the casserole.
- Cover with foil and bake for 15 minutes, then bake uncovered for another 15 minutes.
- Allow to cool slightly before serving.
