  3. While your eggs are cooking, mash the avocado in a bowl, season with salt and pepper, and set aside.
  4. Assemble your Loaded Hash Browns by starting with a layer of crispy hash browns, topping with mashed avocado, fluffy scrambled eggs, and dollops of cottage cheese.
