- In a clean mixing bowl, pour in ½ cup of cold heavy whipping cream and beat on high speed until stiff peaks form, about 2-3 minutes.
- In a separate bowl, mix 8 oz. of softened full-fat cream cheese with 5 tablespoons of granulated stevia until smooth, about 2-3 minutes.
- Fold in ½ cup of fresh blueberries, 1 teaspoon of lemon zest, and ½ teaspoon of pure vanilla extract into the cream cheese mixture.
- Gradually fold in the whipped cream until just combined, about 1-2 minutes.
- Spoon the mixture into dessert glasses and top with extra blueberries. Serve immediately or chill for 15-30 minutes.
