Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Line a muffin pan with paper liners or spray with non-stick spray.
  2. In a small bowl, whisk together oat flour, baking soda, and salt.
  3. In a larger bowl, cream together white sugar, applesauce, and melted coconut oil until smooth.
  4. Add lemon juice, lemon zest, almond milk, vanilla extract, and eggs to the creamy mixture. Whisk until combined.
  5. Fold the dry ingredients into the wet ingredients using a spatula. Stir in chia seeds.
  6. Fill each muffin cavity about 2/3 full with the batter.
  7. Bake for 15 to 18 minutes. Muffins should spring back when touched.
  8. Allow muffins to cool for a few minutes, then transfer to a wire rack to cool completely.
