Ingredients
  

For the Bulgogi
  • 1 pound Beef Sirloin Slice thin against the grain
  • 1/2 cup Soy Sauce Try Tamari for gluten-free
  • 2 tablespoons Sesame Oil Substitute with olive oil if preferred
  • 3 cloves Minced Garlic Fresh is best
  • 1 tablespoon Sugar Brown sugar adds depth
For the Veggies
  • 1 medium Onion Yellow or white preferred
  • 1 cup Bell Peppers Feel free to swap varieties
  • 1 cup Kimchi Use pickled vegetables if unavailable
For Assembly
  • 4 pieces Sub Rolls or Hoagie Rolls Toast for extra crunch
  • 8 ounces Cheese Provolone, American, or alternatives like cheddar

Method
 

Prep and Cook
  1. Wash and slice the beef sirloin into thin strips against the grain. Chop the onion and bell peppers into bite-sized pieces.
  2. In a mixing bowl, combine soy sauce, sesame oil, minced garlic, and sugar. Add sliced beef and marinate for at least 15 minutes.
  3. Heat a large skillet and add a splash of oil. Sauté onions and bell peppers for about 5 minutes until tender.
  4. Push vegetables to one side of the skillet and add marinated beef. Cook for about 5 minutes until browned.
  5. Stir in the kimchi and cook for an additional 2 minutes.
  6. Toast rolls until golden. Fill each with the bulgogi mixture and top with cheese. Broil for about 2 minutes until melted.
