For the Sauce
  • 1 can Canned Coconut Milk Adds creaminess; substitute with vegan butter if desired.
  • 2 tablespoons Reduced Sodium Tamari Soy Sauce Use regular soy sauce if gluten is not a concern.
For Garnish
  • 2 tablespoons Green Onions Keep white and green parts separate for best results.

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and keep warm.
  2. Finely chop garlic and green onions, separating white and green parts.
  3. In a nonstick skillet, add a tablespoon of water over medium-high heat. Sauté minced garlic for 1-2 minutes until fragrant.
  4. Add white parts of green onions and sauté for an additional 3 minutes.
  5. Pour in coconut milk and tamari soy sauce; stir to combine and heat through for 1 minute.
  6. Add cooked pasta to the skillet and toss to coat in the sauce. Heat through for 1-2 minutes.
  7. Serve garnished with green onion tops, optional vegan Parmesan, chili flakes, or sesame seeds.
