For the Shrimp
  • 16-20 pieces Shrimp Larger shrimp, deveined and butterflied
For the Filling
  • 1 cup Lump or Claw Crab Meat Fresh if possible
  • 1 cup Cooked Spinach
  • 1 cup Chopped Artichokes
  • 1/2 cup Mayonnaise Can substitute with sour cream
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Worcestershire Sauce
  • 1/2 cup Italian Breadcrumbs
  • 1/2 cup Mozzarella and Pepperjack Cheese Can substitute with cheddar
  • 2 cloves Minced Garlic
  • 1 teaspoon Dried Herbs Italian seasoning works well
  • 1 tablespoon Fresh Lemon Juice
  • 1 tablespoon Lemon Zest
For the Seasoning
  • 1 teaspoon Smoked Paprika
  • 2 tablespoons Olive Oil
  • 1 teaspoon Old Bay Seasoning
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 to taste Pepper For general seasoning
For the Sauce
  • 1/2 cup Unsalted Butter For the sauce
  • 2 tablespoons Fresh Dill For flavor

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine olive oil, smoked paprika, Old Bay seasoning, garlic powder, onion powder, Italian seasoning, and a pinch of pepper.
  3. Coat the deveined and butterflied shrimp generously with the spice mixture.
  4. In another bowl, mix lump crab meat, cooked spinach, chopped artichokes, mayonnaise, breadcrumbs, mozzarella, pepperjack cheese, minced garlic, and dried herbs until well combined.
  5. Stuff the crab mixture into the butterflied shrimp, then arrange them on a lined baking tray.
  6. Bake in the oven for 20-25 minutes until the shrimp are opaque and filling is golden.
  7. Melt unsalted butter in a small saucepan on low heat and stir in fresh dill and lemon juice.
  8. Serve the stuffed shrimp drizzled with the Garlic Butter Dill Sauce.
