- Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
- In a mixing bowl, combine fresh blueberries, granulated sugar, lemon juice, and vanilla extract; gently toss until coated.
- Open the refrigerated biscuit dough and flatten each piece to about 1/4-inch thick. Spoon blueberry mixture onto each piece.
- Fold dough edges over filling and pinch to seal. Place on the prepared baking sheet.
- Brush melted butter on the tops of each pie bomb for a golden crust.
- Bake for approximately 15 minutes until golden brown and puffed up.
- Cool for 5 minutes, then dust with powdered sugar before serving.
