  • 8 slices Thick-Cut Irish Bacon chopped
  • 1 medium Yellow Onion thinly sliced
  • 2 tablespoons Butter or Olive Oil
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder optional
  • 1 teaspoon Smoked Paprika optional
For Garnish
  • 2 tablespoons Fresh Parsley chopped

Preparation Steps
  1. Scrub the Yukon Gold potatoes under running water, then dice them into 1/2-inch cubes.
  2. Slice the yellow onion thinly.
  3. Chop the thick-cut Irish bacon into bite-sized pieces.
  4. Heat a large skillet over medium heat and add the chopped bacon. Cook for 6-8 minutes until crispy.
  5. In the same skillet, add the sliced onions and sauté for about 2-3 minutes.
  6. Stir in the diced potatoes, seasoning with sea salt, black pepper, and optional spices. Mix thoroughly.
  7. Spread the mixture evenly and cook undisturbed for 4-5 minutes to form a crust.
  8. Dot with butter and cook or broil for 2-3 minutes for extra crunch.
  9. Serve hot, garnished with fresh parsley.
