Preparation Steps
- Scrub the Yukon Gold potatoes under running water, then dice them into 1/2-inch cubes.
- Slice the yellow onion thinly.
- Chop the thick-cut Irish bacon into bite-sized pieces.
- Heat a large skillet over medium heat and add the chopped bacon. Cook for 6-8 minutes until crispy.
- In the same skillet, add the sliced onions and sauté for about 2-3 minutes.
- Stir in the diced potatoes, seasoning with sea salt, black pepper, and optional spices. Mix thoroughly.
- Spread the mixture evenly and cook undisturbed for 4-5 minutes to form a crust.
