For the Cake
  • 2 cups almond flour gluten-free alternative
  • 1 cup Swerve Granular or your preferred granulated sweetener
  • 1 scoop whey protein powder optional but recommended
  • 1 tablespoon baking powder
  • 2 teaspoons pumpkin pie spice or a blend of cinnamon, nutmeg, and ginger
  • 1 pinch salt
  • 3 large Pete & Gerry's Eggs or any large eggs
  • 1 cup pumpkin purée ensure it’s pureed pumpkin
  • 1/2 cup unsalted butter melted
  • 1 teaspoon vanilla extract pure
For the Cream Cheese Layer
  • 8 ounces cream cheese softened
  • 1/4 cup melted butter
  • 1/2 cup Swerve Confectioners or other powdered sweeteners
For the Topping
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup sugar-free chocolate chips or low-sugar dark chocolate pieces

Method
 

Basic Steps
  1. Preheat your oven to 325°F and grease a 9” x 13” pan.
  2. In a large mixing bowl, whisk together all dry ingredients.
  3. Add in all wet ingredients and mix until smooth.
  4. Pour the batter into the prepared baking pan.
  5. Prepare the cream cheese mixture and dollop it over the cake batter.
  6. Swirl the cream cheese into the batter with a knife to create a marbled effect.
  7. Sprinkle the chopped pecans and chocolate chips over the top.
  8. Bake for 40-45 minutes until mostly set, with a slight jiggle in the center.
  9. Cool completely in the pan before serving.
