Method
 

Step-by-Step Instructions
  1. Wash and dry the fresh strawberries. Remove stems and dice into small pieces.
  2. In a bowl, combine diced strawberries with Greek yogurt and vanilla extract. Fold gently until covered.
  3. Line a baking sheet with parchment. Scoop about 2 tablespoons of the mixture onto the sheet.
  4. Freeze for about 30-45 minutes or until solid but not rock-hard.
  5. Melt the chocolate chips and coconut oil in the microwave, stirring until smooth and let cool slightly.
  6. Dip each cluster into the melted chocolate and place back on the baking sheet.
  7. Let sit at room temperature for 10 minutes until set, or freeze for an additional 5-10 minutes.
