- Wash and dry the fresh strawberries. Remove stems and dice into small pieces.
- In a bowl, combine diced strawberries with Greek yogurt and vanilla extract. Fold gently until covered.
- Line a baking sheet with parchment. Scoop about 2 tablespoons of the mixture onto the sheet.
- Freeze for about 30-45 minutes or until solid but not rock-hard.
- Melt the chocolate chips and coconut oil in the microwave, stirring until smooth and let cool slightly.
- Dip each cluster into the melted chocolate and place back on the baking sheet.
- Let sit at room temperature for 10 minutes until set, or freeze for an additional 5-10 minutes.
