For the Honey Butter Spread
  • 1/2 cup Softened Butter can use plant-based butter
  • 1/4 cup Honey maple syrup can be used for a change

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking dish.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
  3. In a separate bowl, blend mashed sweet potatoes, buttermilk, eggs, and honey until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Transfer the batter into the greased baking dish and smooth the top.
  6. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  7. In a bowl, mix softened butter and honey until light and creamy for the honey butter.
