Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a food processor, combine flour, sugar, cinnamon, and salt. Add butter and pulse until the mixture resembles sandy crumbs.
  3. Pour cold water while pulsing until a dough forms. Don't overmix. Form into a disc.
  4. Wrap the dough in plastic and refrigerate for at least 30 minutes.
  5. Roll out the dough to 1/8-inch thickness and cut into rectangles (3"x4").
  6. Spoon strawberry preserves onto half of the rectangles. Brush edges with water.
  7. Cover with remaining rectangles, crimp edges with a fork to seal.
  8. Bake for about 25 minutes until golden brown.
  9. Prepare the glaze by whisking together powdered sugar, vanilla, milk, and corn syrup.
  10. Drizzle glaze over cooled pop tarts, adding sprinkles if desired.
  11. Let glaze set for at least 30 minutes before serving.
