  • 2 medium zucchini
  • 2 medium bell peppers choose vibrant colors
  • 1 large red onion
  • 1 pint cherry tomatoes
  • 2 medium carrots
  • 3 tablespoons olive oil
  • 1 tablespoon dried oregano
  • to taste salt
  • to taste pepper
Optional Add-ins
  • 2 cloves garlic minced
  • 1/4 cup Parmesan cheese sprinkled at the end

Method
 

Cooking Instructions
  1. Preheat the oven to 425°F (220°C) for about 10 minutes.
  2. Wash and chop vegetables into even bite-sized pieces.
  3. Combine vegetables with olive oil, oregano, salt, and pepper in a large bowl and toss to coat.
  4. Spread the seasoned vegetables in a single layer on a baking sheet.
  5. Roast the vegetables in the oven for 25-30 minutes, stirring halfway through.
  6. Optionally, sprinkle minced garlic or Parmesan cheese over veggies 5 minutes before finishing.
  7. Remove from the oven, let sit for a couple of minutes, and serve warm.
