- Gather all your ingredients. Dice the Yukon Gold or red potatoes, slice the yellow onion, chop the bacon, and chop parsley.
- Heat the skillet over medium heat and cook the bacon for 6-8 minutes until crispy.
- Push the bacon to one side and sauté the onions for 2-3 minutes until translucent.
