Salad Preparation
- Prepare the grill by preheating to medium-high heat, around 400°F (200°C). Clean and oil the grates to prevent sticking.
- Slice nectarines into wedges and grill cut side down for 2-3 minutes on each side until tender.
- Whisk together lemon juice, white wine vinegar, lemon zest, fresh herbs, and olive oil to make the vinaigrette. Set aside.
- In a large bowl, toss together mixed greens, halved cherry tomatoes, diced heirloom tomatoes, and pitted fresh cherries. Drizzle with vinaigrette.
- Add grilled nectarines to the salad and gently tear burrata cheese over the top. Scatter slices of prosciutto and season with salt and pepper.
