  • 1 lime Lime Juice and Zest lemon juice/zest is a great alternative
  • to taste Salt and Pepper adjust according to the broth

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat until shimmering.
  2. Add 1 pound of diced chicken breasts and cook for 5-7 minutes until golden brown.
  3. Mix in 1 chopped onion, 3 minced garlic cloves, and 1 tablespoon ginger. Sauté for 3-4 minutes.
  4. Pour in 6 cups of chicken broth and bring to a gentle simmer, then stir in 1 cup white rice. Cook uncovered for 15 minutes.
  5. Add 2 sliced carrots and 1 chopped bell pepper, simmer for an additional 5-7 minutes.
  6. Stir in 2 tablespoons soy sauce, lime juice, and zest. Adjust seasoning with salt and pepper.
  7. Garnish with freshly chopped cilantro before serving.
