  • 4 slices thick bread Sourdough recommended
  • 4 tablespoons butter Can substitute with plant-based butter
  • 2 cloves garlic minced
  • 1 cup mozzarella cheese shredded; substitutes include Gouda or Swiss
  • 1 cup cheddar cheese shredded; can use dairy-free cheese for vegan option
  • to taste salt
  • to taste pepper

  • jalapeños sliced; for a spicy kick
  • feta cheese for a Mediterranean touch

Method
 

Preparation
  1. In a small pan over medium heat, melt 4 tablespoons of butter. Add 2 cloves of minced garlic and cook for 1-2 minutes until fragrant. Remove from heat.
  2. Brush one side of each of the 4 thick slices of bread with the garlic butter mixture.
  3. Heat a skillet over medium heat and place two slices of the buttered bread in the skillet, buttered side down.
  4. Sprinkle 1 cup each of shredded mozzarella and cheddar cheese over the bread in the skillet. Top with the remaining two slices of bread, buttered side up.
  5. Cook for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes until the cheese is melted.
  6. Remove from the skillet, let cool for a minute, then slice and serve with tomato soup if desired.
