Preparation
- In a small pan over medium heat, melt 4 tablespoons of butter. Add 2 cloves of minced garlic and cook for 1-2 minutes until fragrant. Remove from heat.
- Brush one side of each of the 4 thick slices of bread with the garlic butter mixture.
- Heat a skillet over medium heat and place two slices of the buttered bread in the skillet, buttered side down.
- Sprinkle 1 cup each of shredded mozzarella and cheddar cheese over the bread in the skillet. Top with the remaining two slices of bread, buttered side up.
- Cook for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes until the cheese is melted.
- Remove from the skillet, let cool for a minute, then slice and serve with tomato soup if desired.
