- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a food processor, blend the pitted Medjool dates with about half a cup of hot water until smooth.
- Add the melted coconut oil, eggs, and vanilla extract to the blended date mixture and pulse until smooth.
- In a bowl, whisk together the cocoa powder, baking powder, and salt, then gradually add to the wet mixture.
- Pour the brownie batter into the prepared pan and spread evenly. Sprinkle dark chocolate chips on top if desired.
- Bake for 20 to 25 minutes until the edges are set and the center is soft. A toothpick should come out with a few moist crumbs.
- Let the brownies cool completely in the pan on a wire rack before slicing.
