Step-by-Step Instructions for Fudgy Chewy Brookies
- Preheat your oven to 160°C (320°F) with fan or 170°C (338°F) without. Line a baking tray with parchment paper.
- Melt dark chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth, then mix in vanilla extract.
- In a separate bowl, beat caster sugar, demerara sugar, and eggs until thick and fluffy, about 5 minutes.
- Sift together flour, cocoa powder, baking powder, and salt. Fold in chocolate chips.
- Gently fold the melted chocolate mixture into the whipped egg and sugar mixture.
- Add the dry ingredients to the wet batter and fold until just combined, being careful not to overmix.
- Scoop tablespoons of dough onto the prepared baking tray, spaced apart. Bake for 12-14 minutes.
- Remove from oven and optionally sprinkle with sea salt. Let cool on the tray for about 10 minutes before transferring to a cooling rack.
