Step-by-Step Instructions for Fudgy Chewy Brookies
  1. Preheat your oven to 160°C (320°F) with fan or 170°C (338°F) without. Line a baking tray with parchment paper.
  2. Melt dark chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth, then mix in vanilla extract.
  3. In a separate bowl, beat caster sugar, demerara sugar, and eggs until thick and fluffy, about 5 minutes.
  4. Sift together flour, cocoa powder, baking powder, and salt. Fold in chocolate chips.
  5. Gently fold the melted chocolate mixture into the whipped egg and sugar mixture.
  6. Add the dry ingredients to the wet batter and fold until just combined, being careful not to overmix.
