Method
 

Step-by-Step Instructions
  1. Preheat your oven to 160°C (320°F) if using a fan, or 170°C (338°F) without one. Line a baking tray with parchment paper.
  2. Melt chopped dark chocolate and butter in a heatproof bowl over simmering water, stirring until smooth.
  3. In a separate bowl, beat eggs, caster sugar, and demerara sugar until light and fluffy for about 5 minutes.
  4. Sift and mix together flour, cocoa powder, baking powder, and salt. Stir in chocolate chips.
  5. Fold the melted chocolate mixture into the whipped egg mixture gently.
  6. Gradually fold the dry ingredients into the chocolate mixture until just blended.
  7. Drop tablespoons of batter onto the lined baking tray, spaced 2 inches apart. Bake for 12-14 minutes.
  8. Sprinkle warm brookies with sea salt if desired. Cool on the tray for 10 minutes before transferring to a wire rack.
