- Peel and chop 2 to 3 large sweet potatoes into 2-inch pieces and place in a large pot.
- Fill the pot with salted water to cover the sweet potatoes by an inch and bring to a boil.
- Cook for 15-20 minutes until fork-tender.
- Drain the sweet potatoes in a colander and let sit for a minute to escape steam.
- Return sweet potatoes to hot pot and add 6 tablespoons of butter.
- Mash the sweet potatoes and butter together until creamy.
- Stir in minced garlic, salt, pepper, sour cream, and half & half until smooth.
- Serve in a bowl, optionally topped with butter or herbs.
