Method
 

Pancake Preparation
  1. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt. Set aside.
  2. In a separate bowl, mix coconut milk, coconut cream, egg, and melted coconut oil until smooth.
  3. Gently combine wet and dry mixtures, folding carefully.
  4. Let batter sit for about 5 minutes while preheating the skillet.
  5. Preheat a skillet over medium heat and lightly grease it.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form, then flip and cook until golden brown.
