Pancake Preparation
- In a large mixing bowl, whisk together flour, sugar, baking powder, and salt. Set aside.
- In a separate bowl, mix coconut milk, coconut cream, egg, and melted coconut oil until smooth.
- Gently combine wet and dry mixtures, folding carefully.
- Let batter sit for about 5 minutes while preheating the skillet.
- Preheat a skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form, then flip and cook until golden brown.
- Serve warm, garnished with coconut flakes and paired with syrup or fruit.
