Step-by-Step Instructions
  1. In a food processor, pulse the walnuts until they are finely chopped, taking about 1 minute. Look for a crumbly texture without any large chunks remaining.
  2. Add the Medjool dates, unsweetened cocoa powder, chia seeds, shredded coconut, and vanilla extract to the processor. Blend on high for 1-2 minutes, pausing to scrape the mixture down occasionally.
  3. Using a mini cookie scoop or tablespoon, scoop out the chocolate date mixture and roll it into bite-sized balls between your palms. Aim for approximately 1 inch in diameter for each ball.
  4. Once all the Easy Chocolate Date Balls are formed, transfer them to an airtight container. Store in the refrigerator for up to 7 days or freeze for up to 3 months.
