For the Dressing
  • 3/4 cup plain Greek yogurt or sour cream for a tangy flavor
  • 1/4 cup mayonnaise light or vegan for a healthier option
  • 2 tablespoons white vinegar or apple cider vinegar as a substitute
  • 2 tablespoons lemon juice fresh preferred
  • 2 tablespoons dill preferably fresh
  • 1 tablespoon ranch seasoning or another dry seasoning mix
  • 2 tablespoons avocado oil or olive oil
  • 2 tablespoons pickle juice from the jar of dill pickles

For the Salad
  • 1 can skipjack tuna drained, about 5 oz
  • 8 oz protein pasta regular or gluten-free as needed
  • 2 cloves garlic minced
  • 2 scallions/green onions sliced
  • 1 cucumber diced; English variety recommended

Method
 

Cooking Instructions
  1. Begin by bringing a large pot of salted water to a boil. Add protein pasta and cook until al dente, then drain and rinse under cold water.
  2. Combine Greek yogurt, mayonnaise, vinegar, lemon juice, dill, ranch seasoning, avocado oil, pickle juice and salt in a mason jar or bowl, and mix until creamy.
  3. In a mixing bowl, add cooled pasta, drained tuna, minced garlic, sliced scallions, and diced cucumber, mixing gently.
  4. Pour dressing over the pasta mixture and gently stir to combine without breaking up the tuna too much.
  5. Serve immediately or refrigerate for at least 30 minutes to allow flavors to meld.
