  • 1/4 cup Fresh Dill
  • 1/4 cup Fresh Parsley optional but highly recommended
  • 1 cup Feta Cheese substitute with goat cheese for a tangy twist
For the Dressing
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tablespoons Lemon Juice freshly squeezed is best
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Method
 

Preparation

  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
  4. Drizzle the prepared dressing over the salad and toss everything gently to coat.
  5. Allow the salad to rest for 10 to 15 minutes before serving to let the flavors meld.
