  • 8 ounces Smoked Salmon thinly sliced Nova Lox
  • 8 ounces Cream Cheese 1/3 less fat cream cheese
  • 1 cup Cucumber cut into matchsticks
  • 1/4 cup Red Onion finely chopped
  • 2 tablespoons Capers drained
  • 1 slices Lemon for garnish
For Garnishing
  • 2 tablespoons Fresh Dill for garnish
  • 2 tablespoons Extra Capers for serving

Method
 

Step-by-Step Instructions
  1. Lay a large piece of plastic wrap on a clean work surface.
  2. Arrange slices of smoked salmon in an overlapping rectangle about 6x12 inches.
  3. Gently spread cream cheese evenly over the surface of the salmon, leaving a half-inch border.
  4. Place cucumber matchsticks along one edge of the salmon rectangle.
  5. Using the plastic wrap, carefully lift the edge of the salmon and tightly roll it around the cucumber sticks.
  6. Refrigerate the wrapped roll for at least 30 minutes.
  7. Once chilled, unwrap the plastic wrap and slice the roll into 16 pieces, each about half an inch thick.
  8. Arrange the pinwheels on a platter, garnishing with finely chopped red onion and capers.
