- Lay a large piece of plastic wrap on a clean work surface.
- Arrange slices of smoked salmon in an overlapping rectangle about 6x12 inches.
- Gently spread cream cheese evenly over the surface of the salmon, leaving a half-inch border.
- Place cucumber matchsticks along one edge of the salmon rectangle.
- Using the plastic wrap, carefully lift the edge of the salmon and tightly roll it around the cucumber sticks.
- Refrigerate the wrapped roll for at least 30 minutes.
- Once chilled, unwrap the plastic wrap and slice the roll into 16 pieces, each about half an inch thick.
- Arrange the pinwheels on a platter, garnishing with finely chopped red onion and capers.
