  • 1 cup Mixed Nuts (Cashews, Almonds, Walnuts) substitute with your favorite nuts
  • 1/2 cup Pumpkin Seeds can swap for sunflower seeds
  • 1/4 cup Chia Seeds for binding and omega-3s
  • 1/4 cup Flaxseeds can be replaced with more chia seeds

  • 1 cup Dried Cranberries (or Raisins) experiment with other dried fruits
  • 1/2 cup Natural Peanut Butter or Almond Butter substitute with sunflower seed butter for nut-free version
  • 1/2 cup Honey or Maple Syrup choose maple syrup for vegan option
  • 1 teaspoon Vanilla Extract optional
  • 1 teaspoon Cinnamon adjust to taste
  • 1/4 teaspoon Salt just a pinch

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine rolled oats, mixed nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries, cinnamon, and salt. Stir thoroughly.
  3. In a small saucepan over low heat, melt the peanut butter and honey (or maple syrup) together until smooth. Stir in the vanilla extract.
  4. Pour the melted peanut butter mixture over the dry ingredients and mix well until fully combined.
  5. Using a cookie scoop or spoon, portion the mixture onto the prepared baking sheet and gently flatten each mound.
  6. Place the baking sheet in the oven and bake for 12-15 minutes or until golden.
  7. Once baked, cool on the sheet for a few minutes, then transfer to a wire rack to cool completely.
